1 1/4 c. Shortening
1 c. Sugar
3 Eggs
3 1/4 c. Flour
dash Salt
2 TSR. Vanilla extract OR
1 TSR. Anise extract OR
1 TSR. Almond extract

Directions:
Directions:
Beat shortening creamy; add sugar gradually until light. Add eggs one at a time beating after each addition. Stir in preferred flavoring. Mix flour and salt and add gradually until blended. Cover and chill at least one hour.

Preheat Oven to 400º. Form balls the size of peanuts and flatten slightly with finger tip. Bake for 10 minutes or until bottoms of cookies turn light brown. Serve in a snack bowl.
