3 eggs
1 cup granulated sugar
1/2 tsp salt
1 cup light corn syrup
2 tbsp melted oleo
1 cup pecans
1 tsp vanilla
1 9" pie shell

Directions:
Directions:
Preheat oven to 375º, beat eggs, vanilla, sugar and salt. Add butter and syrup and stir in pecans. Bake 40-45 minutes in pie shell.

Pecan trees are very common in Texas, so we always had bags of fresh pecans around. We ate them, freshly shelled, and of course there was usually a Pecan Pie for dessert. This was my great Aunt "Cupie's" recipe. It's a standard recipe, with no frills, but it was handed down and ended up in my mother's recipe files, so I dedicate it to her. Fresh pecans off the tree in your own backyard is a real treat, though, if you're up to some hard work!
