1 pint whipping cream (2 cups)
1 1/3 cup white syrup
4 cups white sugar
5 oz. pecans

Directions:

Combine all ingredients in large heavy pan. ( I use my dutch oven) Then cook over low heat, very slowly. Cook until a little harder than soft ball stage, then beat until it loses its gloss. Pour out quickly before it hardens.

This is an old candy recipe from the Jackson side of the family. I got this recipe from my Aunt Beth Wooster. I have found out that for every 1000 feet above sea level you need to drop candy recipes cooking by 2 degrees otherwise you get candy so hard you can hardly cut it.
