7lbs Cucumbers (Large or Medium)
1 c. Lime
1 c. Vinegar
1 oz. Red Food Coloring
1 pkg Red Hots
1 Tbsp Alum
10 c. Sugar
8 Cinnamon Sticks

Directions:
Directions:
Peel and Seed Cucumbers. Cut in rings and soak in 1 cup lime to 1 gal. water for 24 hours. Wash and cover with ice water for three hours and drain. Mix one cup vinegar and food coloring with 1 Tbsp alum and enough water to cover. Simmer for two hours. Pour off liquid and discard. Mix 2 cups vinegar, 2 cups water, 10 cups sugar, and 8 sticks cinnamon with red hots.

Bring to boil and pour over pickles. Let stand 24 hours, drain. Pack pickles in jars. Bring liquid to boil again and pour over pickles packed in jars. Seal jars.
