2 1/2 c. sugar
1/2 c. light corn syrup
1/2 c. water
2 egg whites

Directions:
Directions:
In 2-quart saucepan combine sugar, corn syrup, water. Cook to 228º, stirring only till sugar dissolves. (May have to steam down crystals or wipe with cloth-covered fork).

Meanwhile, beat egg whites till stiff peaks form. When syrup reaches 228º, gradually add half the syrup to egg whites beating at high speed on electric mixer. Cook remaining syrup to 242º. Slowly add to egg whites, beating constantly.

Add 1/2 tsp. vanilla (full 1 tsp.) and beat until candy holds its shape. If desired add chopped nuts. Drop from teaspoon onto waxed paper. Swirl top.
