Ingredients:  
3 c. flour, 1 tsp. baking powder, 2 c. water or as needed, 1-2 c. ripe Taiwang (or other) bananas, oil for frying.

Directions:
Directions:
Mix flour and baking powder together. Add water to the flour mixture and mix well. Mash banana and mix into the flour and water mixture. Coat the frying pan with enough oil for lightly frying. Add a few spoonfuls of batter and fry, one side at a time.

Taiwang is a very sweet banana. If using an alternate, add sugar to taste. 1 or 2 eggs may be added.

Pohnpei is a beautiful island in Micronesia, in the South Pacific, which we visited to see the first century ruins, Nan Madol These pancakes were served at The Villager on Pohnpei.
