3 1/2 c. diced rhubarb, 1 1/2 c. sugar, 2 T. tapioca, 3 eggs, 1/2 c. evaporated milk, 1 t. vanilla extract.

Directions:
Directions:
Combine rhubarb, sugar & tapioca. Set aside. Combine eggs, milk, & vanilla. Beat together. Pour egg mixture over rhubarb & blend well. Pour into a lightly buttered 9" glass pie pan. Bake at 425º for 20 minutes. Reduce heat to 350º & bake 25 more minutes. If edge starts to brown, cover with foil.
