1 1/2 c. butter, 1/2 c. minced celery, 1/2 c. grated carrots, 1/2 c. finely chopped onion, 1/2 c. flour, 4 1/2 c. chicken broth, 1/2 tsp. dry mustard, 2 T. Parmesan cheese, 6 oz. grated Cheddar cheese, 1 12 oz. can of beer, salt and pepper to taste.

Melt butter in a large saucepan. Saute vegetables until limp--do not brown. Stir flour into sautéed vegetables all at once and continue stirring over low heat, until flour expands. Gradually add chicken broth, stirring constantly until thickened. Simmer 5 minutes. Blend in cheeses and beer, stirring constantly, until cheese melts. Add seasonings and simmer 10 minutes.

One possible source for the name Milwaukee is the Sioux Indian word "Miniwaki" meaning "firewater". Grandpa Frank Bastian (and for awhile, his father Wilhelm) worked at the Schlitz brewery in Milwaukee for 37 years. This recipe uses cheese and beer, 2 of Wisconsin's favorites.
