“Beans and Pasta – a great cheap hot meal”


1 – 8oz. can of Chick Peas or Northern White Beans
3 or more cloves of Garlic
1 small onion (optional)
1-2 Tblspns. olive oil
1 – 8 oz. can of Hunt’s Tomato Sauce
¾ can of water
Pepper, Basil, 1 Bay Leaf to Taste (salt optional)
1 Lb. small pasta (Tubetti or some other small pasta)

Directions:

Place oil in the bottom of a pot and heat. Saute garlic in oil (and onion, if you choose to use it.) When garlic turns light brown add tomato sauce, water, pepper, basil and 1 bay leaf. Cook for 15 to 20 minutes.
Add Chick peas or beans and simmer for 10 minutes. Cook pasta as directed and drain. Mix with cooked bean sauce. Let stand for 2-3 minutes before serving. Can be served with grated cheese or crushed red pepper to taste.

Variations: Use Northern White Beans, Red Beans or Garbanzo Beans.

This is one of those comfort meals. I love to make it when I come home from work because it is easy and fast to prepare. My Grandmothers made it and so did my Mom. When Mom lived with me, we would eat this every week. Ken likes it, too. I loved the way Aunt Mary prepared it. I just can't seem to make it the same way, but I no matter how you fix it, it's a hearty meal.
