1 egg white
1/2 c packed brown sugar
1 dash vanilla extract
4 c pecans

Directions:
Directions:
Preheat oven to 275 degrees. Line a cookie sheet with waxed paper. Spray the wax paper with cooking spray. Beat the egg white until stiff peaks form. Add brown sugar and vanilla. Stir until smooth. mix in pecans and stir until coated. pour the nuts onto the prepared cookie sheet. Bake until browned about 10 - 15 minutes.
